Years ago I came across an easy, no sauce pasta dish that is delish! The best part is that it is easy to make and can be put together with multiple sub ingredients. This recipe also tastes good with whole wheat pasta which helps make it actually good for you, win win! Basic ingredients are sun-dried tomatoes, artichoke hearts, garlic, pine nuts, and parmesan cheese. Typically I like to add steamed asparagus or broccoli but this time I used sautéed mushrooms and it was equally as good. The only cooking required besides the pasta is the sauteing of the garlic and pine nuts, easy breezy. Once the pasta is cooked, simply mix all the ingredients together with grated parm and serve. The flavors are amazing and paired with a good glass of wine a favorite meal!
