Summer Salad…

This weekend I was inspired to make a salad recipe I had recently torn out of a magazine, it sounded amazing and I figured Father’s Day was the perfect reason to give it a whirl. My husband was grilling steak for his father and himself and I offered to make the salad for their meal. It turned out even better than I imagined, the combination of roasted asparagus, heirloom tomatoes, sharp cheddar and kalamata olives made each bite unique and delish! The recipe also calls out ingredients for the dressing and it was equally wonderful (I’m not normally one to make my own dressing but this was easy and really worth it). My husband really enjoyed it as well and I think this will be our go to summer salad. It tastes light and refreshing and will be perfect with some hearty bread and white wine. I love when a new dish turns out to be a winner!

P.S. The recipe calls for grilled asparagus but if you don’t feel like firing up the grill I roasted in the oven and it was great. I drizzled with olive oil, salt & pepper and roasted at 400 for 5 min.
