People Pleaser…

Tomorrow I’m hosting a brunch to kick off my husband’s birthday weekend. I love brunch! It’s generally easier to pull together than a dinner party and it’s an excuse to pour Mimosas. I’ve been making this crustless Quiche recipe my friend shared for years, and it’s still a favorite. It takes a little time and is so worth it. I usually make the day before and stick in the fridge over night. In the morning just pop in the oven and an hour later, enjoy The best part is you can put any fillings in you want. Some of my favorites are chicken, sun-dried tomatoes, artichoke hearts, and mushrooms. For tomorrow I’m simply adding chopped ham at my husband’s request.  Here is how:

Melt 1/2 stick of butter in saucepan … add 1/4 cup flour and stir until bubbles form. Slowly add 3/4 cup milk, stirring constantly. Once mixture thickens, set aside to cool. In a bowl, stir 1/2 tsp baking powder, 1/2 tsp Dijon mustard, 1/2 tsp salt into 1 1/4 cup small curd cottage cheese. Beat 5 eggs into 5 oz softened cream cheese and cottage cheese mixture. Slowly beat in cream sauce and then 6oz Jarlsberg cheese, 1/3 cup fresh grated parmesan and assorted fillings. Pour into buttered pie plate and bake for 45 min at 350*. Quiche will be puffed and browned. Let cool for 15 min and serve.
