Tomorrow I’m hosting a brunch to kick off my husband’s birthday weekend. I love brunch! It’s generally easier to pull together than a dinner party and it’s an excuse to pour Mimosas. I’ve been making this crustless Quiche recipe my friend shared for years, and it’s still a favorite. It takes a little time and is so worth it. I usually make the day before and stick in the fridge over night. In the morning just pop in the oven and an hour later, enjoy ♥ The best part is you can put any fillings in you want. Some of my favorites are chicken, sun-dried tomatoes, artichoke hearts, and mushrooms. For tomorrow I’m simply adding chopped ham at my husband’s request. Here is how:
Melt 1/2 stick of butter in saucepan … add 1/4 cup flour and stir until bubbles form. Slowly add 3/4 cup milk, stirring constantly. Once mixture thickens, set aside to cool. In a bowl, stir 1/2 tsp baking powder, 1/2 tsp Dijon mustard, 1/2 tsp salt into 1 1/4 cup small curd cottage cheese. Beat 5 eggs into 5 oz softened cream cheese and cottage cheese mixture. Slowly beat in cream sauce and then 6oz Jarlsberg cheese, 1/3 cup fresh grated parmesan and assorted fillings. Pour into buttered pie plate and bake for 45 min at 350*. Quiche will be puffed and browned. Let cool for 15 min and serve.
