Superbowl Sunday Snacks…

I’m really looking forward to this weekend as it’s Superbowl Sunday and a party day. To be completely honest, I barely know what teams are playing. What I’m excited about is getting together with friends as it’s our first social event of the year. Since I love appetizer foods I offered to bring potato skins as they are always a favorite and seem to go hand in hand with a football game. My thoughts quickly went to mini size as they would be easy to eat and finger friendly. I discovered this easy recipe by My Life as a Mrs. and can’t wait to whip these up on Sunday. Here is how:

Pre-heat oven to 425° F.. Cut 3-4 pcs of bacon into small squares and cook, set aside.. Bake 15 mini potatoes on a baking sheet about 20-30 minutes, until fork tender. Cool to touch then gently slice in half lengthwise. Using a 1/4 teaspoon measuring spoon, scoop out a little “pocket” for your fillings.

Place halved potatoes, scooped side down, on a baking sheet. Spray with baking spray, sprinkle with coarse salt, and broil for 2-3 minutes (until beginning to golden and crisp). Remove from oven and turn potatoes right side up. Spray top side with cooking spray, sprinkle again with coarse salt, and broil for an additional 2-3 minutes (should be beginning to golden).

Remove from oven and add a 1/2 teaspoon or so of shredded cheese and top with a square of bacon. Broil for one minute to allow the cheese to melt, watch closely so it doesn’t burn! Garnish with sour cream and chopped chives.
