Yesterday I was inspired to roast asparagus and had to ask myself “why don’t I do this more often?” It’s soo easy and amazing yummy! In 15 min you can prepare this side dish fit for a five star restaurant. Since asparagus is loaded with fiber and antioxidants, and helps protect against cancer, there’s no reason to not enjoy this treat on a regular basis. It goes great with chicken or fish and is also excellent in pasta dishes. Here is how:
Preheat oven to 425*. Place asparagus on baking sheet and drizzle with olive oil, toss to cover completely. Lay asparagus in single layer and season with sea salt (and pepper if desired). Roast in oven for aprox 10-15 min depending on thickness of asparagus. Remove when lightly browned and tender. For added flavor toss with minced garlic and/or Parmesan cheese before roasting.
