Last night I wanted a simple dinner and was inspired to make grown-up grilled cheese sandwiches. This is a fairly easy task in our house as we always seem to have a drawer full of cheese to choose from. I only needed bread and picked up a loaf of olive bread at the market. It’s amazing that 3-4 simple ingredients can make such a great meal! I used a sharp cheddar and a smoked gouda that we had and with the olive bread it was delish. I love all cheese so pretty much any pairing makes me a happy camper and the olive bread simply takes it over the top. Add a glass of red wine and voila!

French onion grilled cheese is my fav! Just carmelize some onions in butter and red wine, place them in rye bread with hours cheese. It is heaven!!
