So it’s week two of my fruit and veggie challenge and it’s going fairly well. A few not perfect days but that’s OK I’m still in. To mix things up a bit this week I thought I would try some veggie side dishes. I tried this broccoli gratin recipe and it was pretty delish! It was super easy and I just happened to have all the ingredients on hand, a big plus. I used a little less cheese and low fat milk to cut some calories and it was still creamy, cheesy, yummy. This is a great way to use up broccoli that’s not getting eaten!
