Yesterday I was inspired to bake Guinness chocolate cupcakes in honor of St Patrick’s Day. I had made them once before and they were so yummy I vowed to make again. Why I waited a whole year I don’t know, silly me should have baked these again much sooner! They are really good, with just a hint of the Guinness stout flavor, a true winner. I followed this recipe found on the Food Network and didn’t change a thing. I did remember last time not liking how my icing turned out (too thin) so this year I bought Duncan Hines whipped cream cheese frosting and it was delish! I highly recommend trying these and don’t wait a whole year!
