In the back of my mind I’m planning a brunch, date to be determined. For me the planning can be as much fun as the event. I was inspired to browse for some recipe ideas and discovered this world of amazing egg cups. Mini, individual cups that are easy and gourmet at the same time, how perfect! I have found many variations, all baked in a muffin tin at 375* for 10-15 min. These creations will be so great for a brunch. People love small food dishes and since they are so easy to make, baking a variety of flavors is easy. I like the variations with ham or bacon as the base with fresh herbs and spices. For a vegetarian option, croissant dough works as the cup too. I’m going to do a trial run in a few weeks to see what we love best and plan the menu!
