I don’t remember the first time I ate turkey tetrazzini but I do remember it had bacon in it. I always thought the classic recipe called for bacon and recently discovered it does not – what a shame! This is a great dish on its own with sautéed onions, garlic, mushrooms, fresh herbs, cream and wine. BUT…add bacon and it’s truly wonderful. I love this recipe from Creative Culinary and it’s a great way to put those turkey leftovers to good use. It makes a lot so for just two or three people I recommend cutting the recipe in half.
